Healthy Scrambled Egg Recipe

My dad was a laborer who worked very hard to provide for his family. Today I want to pay him this small tribute and share with you this simple recipe, which holds one of my fondest childhood memories every time I make it.

Healthy Scrambled Egg Recipe

Sundays were a family day, as my father would get up early to go to the market square in my hometown of Ponce, where it was a real treat to buy meats, seafood, and root vegetables. You could already imagine the delicious meal that might be cooked.

How many times did I get up at 6:00 am to go with him? I remember I always craved a sesame horchata or a root juice, and he would buy it for me as a reward in that moment. Even the butchers knew me and greeted me. We would use those purchases in the following days, but the fondest memory was when he would come home and prepare breakfast for the whole family.

Everyone woke up to the delicious smell of freshly baked bread from the bakery, scrambled eggs, orange juice, and coffee with milk. Mmm! What a great way to start a family Sunday.

Afterward, we’d go to church and take walks together—sometimes to the beach, other times to visit relatives. We’d get together to cook or go out, and we had a blast with our cousins, hahaha!

Now I’ll leave you with this simple recipe, but it comes with lots of love.

Thank you, Dad, for such wonderful memories and the great lessons you taught me.

Tips for Delicious Scrambled Eggs

The better the ingredients, the better the final result. If you start with quality eggs, good oil, and follow these tips, I assure you they’ll turn out delicious.

  1. You can make them with butter or lard for more flavor, but they’re less healthy.
  2. At home, we prefer extra virgin olive oil; they turn out amazing and are healthier.
  3. Some restaurants add a splash of milk, but I don’t like it. In my opinion, it makes them too creamy and masks the natural egg flavor—but it’s up to you.
