- 6 egg yolks – 150 gr
- 1 cup of sugar – 200 gr
- 1 1/4 cups of Mascarpone cheese – 285 gr
- 1 3/4 cups of heavy cream – 420 ml
- 1 package of biscotti or cat’s tongue cookies – 400 gr
- 1 cup of strong black coffee – 420 ml
- 1/2 cup of coffee liqueur or rum – 120 ml
- Chantilly cream and grated chocolate
Preparation
- Prepare the mold:
Grease a 24 cm diameter mold. - Egg yolk and sugar mixture:
Whisk the egg yolks and sugar together in a double boiler for about 10 minutes. Remove from the heat and place the mixture in a mixer until it becomes thick and pale. - Incorporate the mascarpone:
Add the mascarpone cheese to the mixture and continue beating until you obtain a homogeneous mixture. - Whip the cream:
In a separate bowl, whip the cold heavy cream until stiff peaks form. Using a spatula, gently fold both mixtures together until fully combined. Set aside. - Prepare the coffee:
In another bowl, mix the coffee and liqueur. Dip each cookie in this mixture, being careful not to soak them too much to avoid them breaking. - Assembling the tiramisu:
In the prepared mold, place a layer of moistened ladyfingers, followed by a layer of mascarpone cream and some grated chocolate. Repeat the layers until all the ingredients are used. Refrigerate overnight. - Final decoration:
Decorate with whipped cream and grated chocolate before serving.
Bonus tip:To replace the mascarpone, blend 1 cup of cream cheese, 1/4 cup of heavy cream, and 2 tablespoons of butter until smooth.
